So my featured class at Herbal Academy of New England revolves around juicing, smoothies and yummy snacks. And snacks don’t get much yummier than these babies!
Although they have no added sugar they taste deliciously sweet and have a rich, buttery flavor to them. I am IN LOVE with puffed millet and it’s such a great substitute for Rice Krispies (Do we even KNOW what’s in Rice Krispies?).
These are a cinch to make and make a good amount. I’ve been eating them for breakfast…and a midday snack…and a midnight snack. But whatever, they’re perfect (and healthy!) for any time of the day 🙂
3 cups puffed organic millet
1/2 lb date, chopped (about 2 cups chopped)
1 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup coconut oil
1/2 cup pure maple syrup
2 tsp wheat germ
1 tsp pure vanilla
- In a small saucepan over medium heat, melt the coconut oil with the maple syrup for a few minutes
- In a mixing bowl combine dates, coconut, walnuts and wheat germ
- Pour coconut oil and maple syrup over the date mix and stir
- Add vanilla and puffed millet and continue stirring until everything is well incorporated
- Let mixture sit in the fridge for an hour
- After an hour, form into balls and serve (can be stored in the fridge for two weeks)
These sound so yummy from your description…sweet and buttery. Does the wheat germ serve a functional purpose or is it there for additional nutritional oomph? I only ask because I don’t have any.
Just for extra oomph! I know its weird but Im actually addicted to wheat germ so I put it in almost all my baked goods 🙂

Yumfully munchable! I’ve been using hemp powder a lot lately so I might try that in place of the wheat germ, or maybe add dried pomegranate arils just for the screaming fun of it. Many thanks for the recipe…I want a giant bowl of these wonderbites right now! 🙂
