Willamette Market & Deli

Colorado Springs is one of my favorite day trips for us to take, and it’s one of the BEST spots to find amazing vegan food. But of all the places I’ve tried thus far, none is quite as delicious as Willamette Market & Deli.

Though it’s fairly low-key and no-frills, their insane vegan dishes for breakfast, lunch and dinner are worth the trip alone. Their marketplace itself, is roughly 90% entirely vegan, with just some organic or grass-fed dairy and meat products thrown in among a huge assortment of awesome plant-based products.

We stopped in for breakfast/brunch because their morning dishes sounded just too irresistible to pass up. We started with the cinnamon bun bread pudding and I was, literally, moaning while eating it. Not even kidding. It’s THAT insane. It was decadent, full of sweet, cinnamon flavor and oozing with vanilla icing. It could easily be considered dessert, but it’s much more fun to enjoy for breakfast.

We also go their breakfast sammy, which was loaded with vegan fried eggs, vegan bacon, tomatoes, horseradish and cheese sauce. Every part of it was super messy, and every part of it was over-the-top delicious. I’d be super happy if I started every day with this sandwich.

They had another sandwich on special that we loved, but I can’t remember the name of it! But it was layered with cream cheese, candied walnuts, sauteed apples and a caramel sauce. Heaven! Messy, messy, vegan heaven.

I will 100% be back for their lunch and dinner options in the future, and if it’s half as amazing as their breakfast, I know I’ll totally love everything else!
