Patter Bars

I know I’ve been posting about lots of granola and granola bars as of late, but I can’t help that there have been so many amazing local companies popping up around Boulder and Denver who have been sharing their delicious vegan goodies with me!

But Patter Bars are absolutely one of the best bars I’ve ever had, and not just because they’re a Denver-based, women-owned, small business. They pride themselves on being full of “clean energy”, and they really, truly are.

I met Patter Gersuk and her daughter at The Choice Market in Denver, at a pop-up vegan brunch a couple weeks ago, where they were sampling their gluten-free, vegan bars. They were incredibly friendly and sweet, and so we chatted for awhile. I’ve tried about a million bars in my lifetime and didn’t expect these to be anything mind-blowing. I loved that they were zero added sugar or oils and low in ingredients, but figured they weren’t vastly different than anything else I’ve tried.

And I’m SO happy that I was SO wrong.

Patter started out making bars at home, like many of us, but hers are so yummy, her family convinced her to start selling them to the masses. Their texture is perfect, and blended really well. I broke a tooth on an overly crunchy bar a couple weeks ago, so I especially appreciate this right about now! But the flavor is really where Patter Bars shine. Their three flavors, Blueberry + Lemon, Coconut + Cashew and Fruit + Nut + Seed are all so awesome, and although they taste like they’re totally full of added sugars, I was pleased to see that their tasty variations were so sweet, due only in part to fruit and dates.

Typically, I’ll showcase bars in fancy ways, like adding them to smoothie bowls or yogurts, or working them into a recipe in some way, but these are so insanely good just on their own, that I’ve just been enjoying them as is, on recent hikes.

BLUEBERRY + LEMON

By a landslide, my favorite flavor. It tasted just like a lemon blueberry muffin. And I’m not talking the healthy, dry ones. I’m talking the sugar-coated, decadent ones. When in reality, they’re only composed of dried blueberries, lemon, pepitas, Medjool dates, sesame seeds, sunflower seeds, ginger, tahini and sea salt. Amazing, right? You gotta try them!

COCONUT + CASHEW

Crafted with possibly my two favorite ingredients, coconut and cashews, this flavor was really rich and filling and bursting with coconut flavor, due in part to the bars composition of both raw and toasted coconut AND coconut oil. This one would definitely do well crumbled on top of a smoothie bowl, once I get some more.

FRUIT + NUT + SEED

The bits of REAL fruit in these really made them extra delicious. They also felt like the healthiest of the bunch for that reason and I’ve been eating this variation on my way to early morning shifts at the dog shelter, so that I get something in my system at 7:30 a.m. without having to wake up crazy early to make a big breakfast that’s just going to weigh me down while I’m running around with puppies! These keep me full and give me a nice energy boost without making me overly full.
