Zucchini Smoothie Bowl and Pumpkin Cinnamon Apple Recipe; Thrive Tribe Snacks Review

Forever loving me some Boulder-based brands, Thrive Tribe is an all dairy and egg-free, paleo and low sugar snack squad, complete with nutrient-packed grain-free granola bites, coconut chips and cookies.

Every item TASTES like it’s full of junky ingredients and artificial stuff, when in reality, it’s just rooted in coconut, coconut sugar, dates, nuts and seeds. They DO contain honey as a sweetener, which we all know I’m OK with eating in small doses. They’ve also got some savory flavors for their coconut chips, which are full of completely clean ingredients as well.

It was hard for me to get super creative with any of the products, because all of them are so delicious, just to eat straight up, as they are. The cookies (I tried the Chocolate Brownie and the Sweet Cinnamon ones) ended up being devoured in one sitting, or thrown in with some ice cream. Too good to contemplate an extravagant recipe for them!

Their grain-free, gluten-free bites, though, they naturally adorned many smoothie bowls and I used also as topping for banana ice cream a few times. They’re insanely yummy, with hearty, filling texture that filled me up faster than my usually smoothie bowl toppings, whether I was eating their Banana Chip or Maple Walnut Bites.

This zucchini smoothie bowl is absolutely my new favorite, and I am inexplicably overjoyed to have a bowl taste SO good, when it’s based in so many veggies. I forget where I read that frozen, raw zucchini made smoothie bowls extra creamy, but I am super happy I did. It really changes the consistency and now I can’t make a smoothie WITHOUT it! ZUCCHINI ALMOND BUTTER SMOOTHIE BOWL

1 small raw zucchini, chopped and frozen

1 large banana, frozen

1/3 cup almond butter

3 tbsp hemp or flax seed

Large handful of kale or spinach

1 tbsp coconut oil

Almond or cashew milk to blend (I use between 1/3-1/2 cup and actually prefer vanilla blends for this smoothie)

  • Add all ingredients to blender and blend until smoothie! Add more almond milk until desired consistency
  • Top with Thrive Tribe Banana Chip Bites

PUMPKIN SPICE APPLES

2 large apples, peeled and sliced (I LOVE Honeycrisp)

1/2 cup apple cider

1/3 pumpkin puree

1/3 cup organic brown sugar

1 cinnamon stick

Minced ginger (optional)

  • Saute apples in a nonstick pan over medium heat for 5 minutes
  • Meanwhile, whisk together cider, pumpkin and brown sugar
  • Add pumpkin mix and cinnamon stick to apples and bring to a boil
  • Reduce to a simmer and cook for 15-20 minutes or until apples are saturated and liquid has been absorbed
  • Top with Thrive Tribe Maple Walnut bites and non-dairy yogurt
