Carrot & Chive Quinoa Patties

I’m not exaggerating when I say this may be the most amazing thing I’ve eaten in my entire life.

I’ve become a huge fan of quinoa since going veg and these patties are absolutely mouth-watering.  No bread or toppings necessary as they’re savory enough to simply eat in a lettuce wrap.  I usually scold Jim for inhaling the food I eat so quickly, but I couldn’t blame him when he instantly went for seconds after consuming his first pattie.  And thirds.  And fourths.  We literally could have eaten the whole batch in one sitting, but I really wanted to save some to share with the girls from work and restrained my cravings for more.  These will be a monthly (if not weekly!) addition to our regular diet.

2 1/2 cups quinoa, cooked

3 eggs

1 cup shredded carrots

1/2 cup chives, chopped

1/2 cup onion, chopped

1/2 cup bread crumbs

1/2 cup rolled oats

1/2 cup Gruyere cheese, shredded

3 cloves garlic, minced

3 tbsp olive oil

1/4 tsp black pepper

  • In a large bowl, combine quinoa, eggs, garlic and pepper and mix well
  • Add chives, onions, carrots and cheese and mix again
  • Fold in bread crumbs and oats, then set aside for 10 minutes
  • Form quinoa mix into 1/2-1″ patties, then heat olive oil in a frying pan over low heat
  • Add patties to oil and cook, covered, on low heat for about 8 minutes.  Turn over and cook the other side, covered, for 6 minutes
  • Repeat until all patties are cooked
