Black Bean, Avocado & Cilantro Salad

So simple, SO addictive!

2 cups black beans, cooked

2 cups wild rice, cooked

2 avocados, chopped

3/4 cup tomato, chopped

1/2 cup red onion, chopped

1/2 cup green onion, chopped

1/2 cup cilantro chopped

1/4 cup orange bell pepper, chopped

3 tbsp lime juice

3 tbsp olive oil

2 cloves garlic, minced

1 cayenne pepper, minced

1 tsp sea salt

1/4 tsp black pepper

  • In a frying pan over medium heat, cook the cayenne in 2 tbsp oil for 1 minute
  • Add organce pepper and cook for 6 more minutes, stirring continuously
  • Meanwhile, mix together all other ingredients
  • When peppers are done, add to bean/rice mix and stir again
