4 Ingredient Dipped Peanut Butter Pretzel Bites

I’ve seriously stumbled upon something amazing, my friends. These mini peanut butter pretzel bites dipped in vegan chocolate chips are downright addictive and I am willing to bet no one would believe they’re vegan at all. They’re one of those snacks you make a pit stop in the kitchen for every time you pass by them. I actively had yo avoid my fridge most of today because I knew these delectable little morsels would be staring me in the face every time I opened the door. They made me weak. And considering I don’t even have a big sweet tooth, I was shocked at home many of these I consumed when they were complete. They’re a perfect blend of sweet and salty and I definitely think using a grittier, saltier homemade peanut butter trumps having a plain creamy store-bought kind. The texture the homemade nut butter has brings these treats over the edge and I dare you to try and keep your hands off them if you do make them. I totally think I’ll be waking up in the middle of the night to sneak some of these. And hello, you only need four ingredients to make them!

1 cup homemade peanut butter (creamy store-bought organic if you must)

1 bag organic mini pretzels

1/2 cup organic brown sugar

1/2 bag- full bag vegan chocolate chips (depending on how much chocolate you want on them-we used about 3/4 of a bag and it made about 30 pretzel bites)

  • Mix brown sugar into peanut butter
  • Roll a small scoop of peanut butter mix into a ball (between 1/2-1 tsp) and lay on middle of a pretzel; then smush another pretzel ontop of it to make a sandwich
  • Place on a baking sheet and let sit in the freezer for a half an hour
  • After a half hour, lay a sheet of parchment paper on the baking sheet
  • Prepare a double broiler, and melt chocolate chips
  • Quickly dip pretzel sandwiches into chocolate and place in parchment paper
  • When all the bites are dipped, set in freezer for another half hour before eating
  • Store in refrigerator
