Whole Sol Review

I’ve made it well known before, that Boulder isn’t exactly vegan heaven. The options here are fairly limited, ESPECIALLY when it comes to breakfast spots.

And then Whole Sol went and saved us all.

The new health-conscious spot on Pearl Street, offers far more than just your average smoothies, juices and coffee. Everything on their menu is not only dairy-free, but gluten-free as well, meaning there’s an extensive list of options for virtually everyone. Your biggest issues here are going to be:

A. Spending an entire paycheck on all their delicious dishes

B. Trying to narrow down which meals to eat, IF you’re not going to spend your whole paycheck here

Honestly though, their prices are incredibly reasonable for the quality of the food, but you may still be inclined to buy one of everything on the menu!

For real though, it took me a LONG time to decide on what I wanted to devour at Whole Sol. With at least 10 over-the-top, loaded smoothie bowl options, hot options like tofu scramble, elaborate toasts, unique juices, uber-fancy coffees and protein-packed snacks, there is no shortage of variety here. I really adore that most of their juices and bowls are packed with a lot of greens, numerous protein sources (like, chickpea cookie dough, protein powders or nut butters) and are all only about 400 calories. Their juices are also a dream come true, with most of them shying away from just greens and fruits, and adding in things like sweet potato, bell peppers, turmeric, cilantro and beets. Their creativity really makes for an insanely awesome and well-rounded menu.

I started off with a Blue Green Dream, simply because I was so intoxicated with the color. The almond milk, blue majik and matcha iced latte was perfect in every way, even though I was equally intrigued by all their CBD and adaptogen lattes, which I will try next visit!

I was also tempted by their seasonal Blueberry Peach Cobbler smoothie bowl, and their Orange Creamsicle version. I was really craving greens, and riding the matcha train that day though, so I ended up with their nutrient-dense green matcha bowl with coconut, blueberries and granola, and it rivaled any of my best homemade bowls that I make in my own kitchen.

And though the white truffle avocado toast and their chia PB and J toast sounded DELISH, I made my own creation, that consisted of avocados, balsamic glaze, tree nut cheese and hemp pesto, atop some of the most unreal GF bread I have ever had. It was perfectly savory and rich, and that meal alone would have kept me full for the entire day.

I finished with a piece of their veggie-filled chickpea frittata, which is a current special right now, that you CANNOT miss. Though I make it at home all the time, Whole Sol’s homemade slice was infinitely better and I could not recommend it more. I followed it up with some of their chickpea cookie dough and was basically in heaven for the rest of the day.
