Because who doesn’t love a good protein packed waffle?

I will take any excuse to indulge in some heavy carbs while hiking, and saying their high protein is just a good excuse for me to eat an embarrassing amount when I’m on the trails.

Boulder-based Vafels are forever trending among the most well-know ultra runners and crazy local athletes, and I’m always seeing them all over social media from my biker/runner friends. And I needed to get in on it!

Lucky for the celiac boyfriend and I, they have gluten-free options in addition to their original, maple, lemon poppy seed and cinnamon flavored variations, and they’re all packed with pearled sugar and plant-based protein. They’re super dense, so REALLY filling if you’re eating them mid-hike.

My FAVORITE way to eat them though, is to have them warmed up, pre-hike, so that I’ve got a quick, easy, satiating breakfast before I even make my way up the mountains. I topped them with peanut butter and jelly, oatmeal, yogurt and granola and even chopped them up to go ontop of smoothie bowls.

I’m a big fan, and if you want to follow the lead of Boulder’s elite, you’ll jump on the Vafel’s train, too!
