Raw Goji Berry & Cocoa Breakfast Bars

In trying to transition myself into a partially raw diet, I have found myself less than thrilled with the breakfast options thus far.  But with help from Rawmazing again, I came up with a yummy raw energy bar topped with “chocolate” that is a great replacement for my cooked granola I used to make every week.  This was also my first effort with the dehydrator, which was a little intimidating, but the end result is awesome!

Goji & Cacao Breakfast Bars

1 cup almonds, soaked 6 hours

1 cup pumpkin seeds, soaked 6 hours

½ cup sunflower seeds, soaked 6 hours

½ cup raw honey

2 tsp cinnamon

½ tsp nutmeg

½ cup Goji berries

½ cup cocao nibs

  • Drain all seeds well (you don’t want to have excess water) and blend the pumpkin seeds and almonds in the food processor until chunky
  • After a few minutes, add in honey, cinnamon and nutmeg and continue to blend in food processor until thoroughly mixed
  • Pour in a large bowl, add sunflower seeds, goji berries and cacao and mix
  • Press onto two (2) non-stick dehydrator sheets and spread out until about ½ thick.  Cut the mix into bars generally 2 inches wide and 5 inches long to make about 24 bars
  • Dehydrate at 145 degrees for 30 minutes
  • Turn heat down to 105 degrees and dehydrate for 7-9 hours, checking them every 2 or 3 hours to make sure they don’t become brittle

ALMOST Raw “Chocolate” Topping

¾ cup organic ghee

¾ cup raw carob powder

1/3 cup raw honey

3 tsp coconut oil

1 tsp vanilla
