These bars are absolute genius. Unfortunately, they were not my brain child.
If you’ve got Pinterest or follow a plethora of food blogs, chances are you’ve seen this recipe EVERYWHERE the past few weeks. It definitely got my attention, as I’ve been struggling to concoct healthier snack recipes to get through the work day. I try to stick to smoothies, popcorn, nuts and fruit between 9 and 5, but sometimes I slip. I’ll feast on Chex mix, pretzels and veggie straws if an afternoon in the office is really dragging and then I feel like absolute c-r-a-p afterwards.
These pretty little energy bars are highly nutritious, extremely filling and magically delicious (I think that’s a phrase form Lucky Charms-but it seems fitting).
And they were the perfect models for experimenting with more food props, don’t cha think?
1 cup organic dates
1 cup organic shredded coconut
1 cup organic dried cranberries
1 cup raw organic walnuts
1 tbsp raw honey (optional)
- Pulse all ingredients together in a food processor until fully broken down and sticky
- Form into saran wrap or foil and press down into roughly a 6 X 6 square, about 1/2″ thick
- Set in the fridge overnight and serve the next day-will keep in the fridge for two weeks (although they’re likely to be eaten VERY quickly!)
