Tamari Tofu with Broccoli

I guess I need to quit calling myself a tofu hater.

Maybe it’s just a phase. But I am totally understanding the appeal to tofu. It’s cheap, easy to prepare and is a great, filling addition to any salad, soup or rice dish. It perfectly accompanies most vegetables and is made delicious, just by whipping up a great marinade. I don’t find the organic, non-GMO versions upsetting to my body and since I live by the phrase “eat what feels right to your body”, I can’t totally discredit the almighty tofu. Sure, the non-organic, crappier versions still make me sick to my stomach and hormonal, but when I’m preparing the dishes myself, I am completely fine.

So many apologies to you tofu for all my shit talking over the years. You will still only be consumed in moderation when it comes to my diet, but I welcome you with open arms now. And major points for getting me to eat more salads now that I’ve added you to the mix.

This broccoli entree looks and kinda tastes like super unhealthy Chinese food. Meaning, it’s absolutely delicious. And not unhealthy at all. Served atop brown rice, millet or some noodles, this is a really satisfying dish.

1 12 oz package organic non-GMO tofu, pressed and cut into 1 inch cubes

3 broccoli crowns cut into large florets

1/3 cup chopped scallions

1/4 cup sunflower seeds

3 tbsp sesame seeds

MARINADE

1/2 cup organic tamari

2 tbsp brown rice vinegar

2 tbsp olive oil

4 cloves garlic

Red pepper flakes

Black pepper

2 tbsp coconut oil for cooking

  • Preheat oven to 400 degrees
  • Whisk together marinade ingredients
  • Pour over tofu, coat completely, then let marinate for at least 30 minutes (can let sit overnight)
  • Meanwhile, toss broccoli with a little olive oil, salt and black pepper and then lay on a baking sheet
  • Roast at 400 degrees for 30 minutes, rotating halfway through
  • Immediately toss with sunflower seeds
  • In a skillet over medium/high heat, melt coconut oil
  • Add tofu and marinade and cook for 5 minutes on each side
  • After cooking on stove top, immediately place under broiler in oven and let broil for 3-5 minutes on each side or until browned
  • Immediately toss with sesame seeds and then serve on top of broccoli and rice
