Collision Brewing

My favorite things about Colorado:

  • The mountain views
  • The beer
  • The food
  • The awesome people that live here

And let me tell you. Collision Brewing in Longmont hits ALL of these marks and then some.

Typically, places in and around Boulder are not the most vegan-friendly. I find myself driving to Denver or Fort Collins regularly to find really great plant-based food, and am consistently disappointed about the lack of plentiful vegan eats in my neighborhood, ESPECIALLY at the breweries. Because vegans love their alcohol, too!

So I was beyond elated to spend an afternoon last week drinking all the awesome beer and hanging with the uber-friendly staff at Collision Brewing last, where I was completely blown away by their beautiful brewery, their sprawling mountain views, and of course, THE FOOD.

Chef Tom Grimmond, is almost completely plant-based himself, and I can’t tell you how refreshing it was to chat with a chef who not only gets super pumped about serving up Impossible Burgers, but is also trying to implement as many plant-based menu options as possible, like having Follow Your Heart cheeses AND ranch available for all meals. Almost everything on their menu can be tweaked slightly to be completely meat-free and dairy-free. And when I say vegan “options”, I don’t mean sad veggie burgers, some mushy tofu or basic salads. I’m talking loaded burgers, fried cauliflower or mushrooms, the best sweet potato fries I’ve ever had, flavorful chili, creative, hearty salads and even chocolate hummus. Most of these items are also gluten-free, but 150% don’t taste like it. And you know I love me some gluten, and I never would have know most of these items were lacking in it!

I also adored the fact that a large portion of the produce and breads used in-house are local and organic whenever possible. Chef Tom prides himself on keeping most of the kitchen staples sourced from nearby businesses and I think that’s something of major importance, especially to most of the people I’ve met in Boulder

And with a MASSIVE dining space, a full bar in addition to their house-brewed beers, the kick-ass staff and a gorgeous outdoor space that will be booming come the summer, Collision Brewing is just pure fun. We’re talking potential go-kart tracks on the property, and maybe even axe-throwing (I hope!). Once the weather warms up, you’re gonna want to camp out in their outdoor seating, enjoy the sprawling mountain views and savor their incredible beer and food.
