Raw Banana Date Pudding

I know, I know. Banana pudding? Gee, how NOT appealing.

While I admit it is not the most innovative meal, it is a hearty, filling and simply sweet snack or breakfast option when raw. It’s so ridiculously simple and it almost tastes a sweet as the pudding that comes pre-packaged in a box. Except this is SO much healthier.

5 bananas, broken into pieces

6 dates, seeded, halved and soaked in 1/2 cup water

1 tbsp chia seeds

2 tsp pure maple syrup

1 tsp pure vanilla

Shredded coconut, chopped walnuts, raisins, nut butters or carob for toppings

  • Blend all ingredients together in a food processor (including the date water) until smooth and creamy-that’s it!
