Sorry for the lack of posts lately-you can blame Justin Timberlake for that one.
In what was surely the best concert/weekend of my entire life, I fell quite off track when it came to being healthy. Back to back shows really messed up the preceding week and threw my normal eating habits for a loop both Saturday and Sunday night. Fenway Park bars are NOT vegan friendly and thus, my diet for almost 48 hours consisted of crappy beers ($10 a can, might I add) and french fries. Healthy is was not. But I was honestly too excited to eat anyways.
As my incredible weekend came to a close, I realized I needed to really get my ass in gear this week. I decided to do another full week of raw eating since it made me feel so amazing last time I did it (although, not as amazing as I felt after enjoying JT for two days). As much as I look forward to new foods and amped up raw meals, I find the meal planning of these weeks in particular very daunting. BUT starting with a good dessert usually gets me motivated and this avocado pie is no different. It’s a great and filling kickstarter-oh yeah, and it tastes effing delicious.
Avocados can seriously be used for almost anything. Some of my favorite sauces (i.e. alfredo sauce) and dressings (see: lime sauce) emerge from these green monsters and honestly, some of the most fabulous desserts (hello, chocolate mousse!). This pie might be the most epic though. Lemon sweet treats were always my fave-especially lemon meringue pie. This one is pretty similar and that is kind of light and fluffy and very rich and creamy. You could just use limes or only lemons if you prefer one over the other. I couldn’t choose so I included both. Didn’t want anyone to get their feelings hurt.
FILLING
Meat of 4 ripe avocados
1 cup fresh coconut meat
3/4 cup lemon/lime juice (about 6-7 fresh squeezed fruits)
1/3 cup coconut oil
1/3 cup raw honey or liquid sweetener
Zest of one lemon or lime
1 tsp pure vanilla
CRUST
3/4 cup raw almonds
1/2 cup shredded coconut
2/3 cup dates, soaked for 1 hour and chopped
1/4 cup pure honey or liquid sweetener
1 tbsp olive oil
- For the crust, pulse all ingredients together in a food processor until a sticky dough has formed (come chucnks are fine, but you want it pretty broken down)
- Press into pie dish
- Pour all filling ingredients into the food processor and pule until smooth and creamy
- Pour into pie crust and top with lemon/lime slices
Looks divine, I wonder if it’s really good with maple syrup instead of raw honey.

It’s just for added sweetness, and the citrus flavors and coconut are pretty potent, so I think the maple syrup would add the sweetness, but not have alot of that maple-y flavor!
That looks splendid! I have yet to try avocado in desserts because it kinda scares me, but you may have convinced me. Avocados do lend a nice creamy touch to things.
Yeah I don’t like or eat raw honey 🙁
We raise bees, so we take a minimal amount of raw honey not used by the bees and enjoy it, little by little. Otherwise, I wouldn’t!

You could use dates to sweeten it. Just throw some in the food processor with the avocado.
