Blueberry Creme Smoothie Bowl

Isn’t it funny when you THINK you’re going to have more time and a clearer schedule, you actually end up having less?

The beautiful weather might be to blame, too. Since I’d rather be reading in the sun most days instead of slaving away in a hot kitchen. Warmer days by the pool mean I’ve been eat mostly salads, smoothie or fruit, so there’s been lack of food inspiration overall.

I promise though…recipes WILL be coming.

In the meantime, I have been finding ways to get creative with all those smoothies and fruit I’ve been consuming. I came up with this smoothie bowl simply by having lots of almost-bad-fruit and already soaked cashews sitting in the fridge. I’ll usually use a small amount of soaked cashews in my smoothies just to make for a creamy consistency, but the larger portion of nuts in this bowl makes for a REALLY decadent breakfast. Really all you gotta do is blend up equal parts fruit and cashews! This would probably be amazing with any fruit, and I’m looking forward to a mango or pineapple version soon-yum!

1 cup frozen blueberries

1/2 cup fresh strawberries

1 1/2 cups soaked cashews

1/4 cup almond/coconut milk + more for desired consistency

Dash of pure vanilla

Hemp, chia and sliced almonds/nuts for topping

  • Blend together fruit, cashews, vanilla and almond milk in a Vitamix until smooth and creamy
  • Top with desired toppings!
