Loaded Breakfast Sweet Potato

In my continued efforts to figure out new, innovative and semi-exciting things for breakfast, I decided to combine a few of my favorite things.

Sweet potatoes, hemp seeds, almond butter and oatmeal.

And sure, I also love bananas, but the others are definitely higher on my list 😉

Not only are these stuffed potatoes a super healthy, flour-less morning dish, but they’re pretty portable too, for meals on the go. I actually ate them like a sandwich one morning on the way to a hike! They’re filling, packed with protein, and kept me satisfied all morning long. And let’s be real-they’re also extremely photogenic! 

1 medium sweet potato, baked (pierce and cook at 375 degrees for one hour)

1 banana, sliced

1 tbsp hemp or chia seed

½ cup cooked oatmeal

2 tbsp pure maple syrup

2 tbsp flaxseed

½ tsp cinnamon

Almond butter

  • Slice sweet potato in half, lengthwise
  • Blend cooked oatmeal, maple syrup, flaxseed and cinnamon until a thick puree is formed
  • Stuff oatmeal into sweet potato
  • Top with banana and hemp seed and drizzle with almond butter, then serve!
